Southwestern Bean & Vegetable Salad

Preparation Time: 20 minutes


Ingredients

  • 1 can (15 ounces) READ Southwestern Bean Salad, not drained
  • 1 cup chopped bell pepper (any color combination)
  • 1 cup sliced radishes
  • 1 cup sliced celery
  • 1/2 cup jicama strips
  • 1/2 cup sliced green onion
  • 1 cup grape or cherry tomatoes, halved
  • Chopped cilantro, optional

Directions

Makes 6 servings.

  1. Place bean salad in large bowl. Stir in remaining ingredients. Cover and chill, or serve room temperature, topped with cilantro, if desired.

Serving suggestion: Spoon salad over mixed salad greens.
