4 Bean Orzo with Grilled Citrus Garlic Chicken

Ingredients
For the Grill
- Zest and juice of 2 lemons
- 4 cloves garlic, minced
- 1/3 cup olive oil
- 3 Tablespoon red wine vinegar
- ½ teaspoon dried oregano
- 2 boneless chicken breasts
- 1 cup cherry tomatoes
For the Orzo Bean Salad
- 1 red bell pepper, seeded and diced
- 1 cup orzo pasta, cooked
- 1 can (15 ounces) READ 4 Bean Salad
Directions
- Prepare the Chicken:
In a medium mixing bowl, whisk together lemon zest and juice, garlic, oil, vinegar, and oregano. Add chicken and toss to coat. Cover and let sit 15 minutes. - Grilling:
Preheat grill to medium-high. Add marinated chicken and cook 6-7 minutes per side, until cooked through. Place a sheet of aluminum foil on grill grates. Add tomatoes and grill 5-7 minutes until charred. Remove both from grill and let chicken rest 10 minutes, then slice into strips. - Assemble the Dish:
In a large bowl, combine bell pepper, orzo, grilled tomatoes, and bean salad. Fold in grilled chicken strips. - Serve:
Serve warm or at room temperature.
